I went back to Minnesota for the 4th of July with 3 goals in mind:
- Celebrate one of my very favorite holidays with family.
- Say goodbye to the home I spent my high school years making mistakes in.
- Pay homage to the fenced in back yard by tiring out my wild pupper.
While cleaning out my tropical themed bedroom that threw a big middle finger to Minnesota winters, I was reminded by my diaries and amateur poetry collection that I fully embodied the textbook definition of teenage angst. As if that wasn’t enough, I also went through boxes filled with sentiments from my childhood. Unsurprisingly, this process resurfaced memories that have lied dormant for 20 years and took me on the All Access VIP tour of my emotional capacity. Needless to say, I needed a drink.
Every holiday we spend together, my sisters and I decide on ~the drink~ to showcase the holiday theme. With that theme in mind, some creations have been more successful than others.
The drink this year had to appeal to a few diets. My sister is currently doing the 21 day fix and I’m still active in my love affair with ketosis, which meant low carb, low sugar, but also delicious. UGH, we’re so demanding.
We stood around at the entrance of the little Sartell Coborns trying to decide on what to do. Eventually, we settled on adapted mojitos, and BOY am I glad we did. We had originally planned on muddling blueberries and raspberries, but turns out, Coborns was fresh out of blueberries.
Thanks a lot, America. Pull it together and make us more blue fruit, would ya?
Originally when I began writing this, I had the 100% intention of sharing our July 4th mojito recipe with my average iPhone6 photography to boot. Guess what BOTH of the grocery stores that I went shopping at yesterday lacked? Mint. MINT. HOW DOES ONE LACK MINT?! What’s with grocery stores lacking the ingredients I need? It’s okay, I have a college degree’s worth of improvisation skills and let me tell ya, this drink improved.
Here you have it – a low carb, frou-fruit adult beverage that doesn’t call for any mint because of the travesty that is my mint-lacking balcony garden. On a semi-related note, I love calling beverages adult because, according to science, that’s what I should be identifying as.
I’m a big fan of Sparkling Ice because it’s cheap, there’s a lot of flavors and it’s delicious. I will say that it tends to lean on the sweet side, so diluting it with rum helps.
Low Carb Strawberry Basil Fizzy Adult Beverage
- White Rum
- Low Carb Fizzy Beverage (Soda Water, Sparkling Ice, Zevia)
- Lime (optional)
1. Wash fresh produce.
2. Slice 1 strawberry and place in a glass with a basil leaf.
4. Add 1 shot of white rum.
5. Fill glass to the top with ice.
6. Top off with low carb fizzy beverage.
7. Squeeze a lime wedge in there, give it a stir, garnish and enjoy.
Don’t have a muddler? Me neither. Turns out my apartment lacks anything that I could even pass as a muddler, either, which was pretty annoying. I wound up using the end of a wooden spoon I have and put some extra elbow grease into the process.
I just ordered a beautiful stainless steel muddler on Amazon for $7. It’ll be here Tuesday and I can’t wait to muddle the shit out of some fruit. Truthfully though, that’s kinda what it looks like when you’re done. Get your own muddler here.
